Cheddar, Somerset

Our whisky journey begins with Butcombe’s award-winning ales, brewed using the finest Maris Otter barley. Our beer wash is then fermented and distilled at our distillery in Castle Cary, where traditional methods meet artisanal skill, creating a rich, malty new-make spirit that reflects the depth and complexity of the original beer.

The spirit is matured in a selection of hand-picked casks, including ex-bourbon barrels from Heaven Hill Distillery and red wine casks, allowing it to slowly absorb the layered notes of oak, spice, and fruit. Over time, the whisky develops a beautifully complex profile, with flavours of toffee, dark chocolate, and a subtle malt sweetness.

Glastonbury Tor, Somerset

From the very beginning, our goal was to create a whisky that truly stood apart. To achieve this, we partnered with Butcombe Brewery, working closely to develop a bespoke whisky wash inspired by their award-winning Butcombe Original beer. Using Maris Otter, one of the finest heritage grains, along with black malt and a touch of Butcombe’s magic, we created a rich, characterful base spirit. The result is a wash layered with the creamy depth of Maris Otter and the chocolatey, gently smoked notes of black malt — a bold, flavour-driven foundation for our Somerset whisky.
